“Tres con todo!” [Three all included] ordered the gorgeous brunette in perfect Spanish in the middle of the hot, chaotic kitchen. She was clearly out of place, tall, sensual, fit among the Mexican cooks and waiters. Rosita was sweating as she stirred the huge pot of carnitas with a large wooden spoon.

A few months earlier, the former Rosita had been an older, kind woman running a small street stand with her daughter. She was the sweetest vendor anyone had ever met. One of her regulars, a quiet man who always ate in silence, had been watching everything.
